  • Materials: stainless steel blade. Handles are made of many different woods including - leopard wood, birdseye maple, cocobola, ebony, maple burls, and mahogany. Some of the colored woods have been infused with epoxy resins while others are natural.

High-carbon knives require more maintenance than stainless steel knives to prevent rusting, as they are prone to corrosion when exposed to moisture and acidic ingredients. Unlike rust resistant stainless steel, carbon steel demands extra care—but the performance rewards are worth it.

Essential Daily Maintenance:

Carbon steel knives should not be placed in a dishwasher and should be hand wash immediately after use. Carbon steel knives require extra care to prevent rusting, including immediate washing and drying after use, and avoiding exposure to moisture, acidic ingredients, and salt. Always dry your blade completely with a soft cloth.
